Because the car/truck is assumed to be negative earthed(grounded) i.e. the negative pole is connected to the vehicle’s body. Should one take off the positive first, there is a risk the spanner (wrench) could make contact with the body, create an arc, possibly welding the spanner to the body!

Older UK cars (up to the early 60’s, maybe even the 70’s) were positive earthed (grounded). In this case, the positive pole would be removed first.
